The A’kub plant

 

A’kuvit HaGalil, or A’kub (Gundelia tournefortii L.) is known as an edible plant with a deep rich flavor, somewhat similar to the flavor of artichoke hearts. Among the Arab farmers it’s considered the highest quality wild vegetable, and a real treat among housewives and diners. It upgrades salads and mixes in beautifully in warm vegetarian side-servings and in roast and cauldron dishes. Among the various medicinal merits of this unique plant are prevention and curing of disease in the digestive system, liver disease, allergies, nausea, dizziness and low blood pressure.
